17 oz container full fat cottage cheese
¼ cup honey
Pinch of matcha powder (optional, for color)
½ tsp vanilla extract
⅓ cup raw pistachios
Instructions
Add cottage cheese, honey, vanilla extract, and pistachios to a food processor or blender.
Blend until the mixture is completely smooth.
Pour the mixture into a bowl or loaf pan.
Freeze for 2–4 hours, or until the ice cream is set.
Serve and enjoy. Optionally, top with chopped pistachios and a drizzle of honey.
If the ice cream is too hard, let it sit at room temperature for 15–30 minutes before serving.
Notes
Use full-fat cottage cheese for the creamiest texture.
