1 cup (226g) butter, slightly softened
1 (16oz) (453g) cottage cheese
2¼ cups (300g) all-purpose flour
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, combine the slightly softened butter and cold cottage cheese using a stand or hand mixer. Mix until no large lumps of butter remain.
Add the flour and mix just until the dough comes together. It should feel cool to the touch.
Divide the dough in half. Roll each half into a 12–13 inch circle on a floured surface.
Cut each circle into 16 wedges. Starting from the wide end, roll each wedge into a crescent shape.
Place on a baking sheet and bake for 25–30 minutes or until lightly golden.
Notes
Cool rolls completely and drizzle with glaze (1 cup powdered sugar, 1 tsp vanilla, 1–2 tbsp milk) for a sweet version.
Add orange or lemon zest to the dough or use citrus juice in the glaze for a fresh twist.
Sprinkle parmesan cheese on top before baking for a savory option.
Brush with garlic butter or add Italian seasoning to the dough for extra flavor.
Ensure dough is cool before rolling to prevent spreading.
Make the dough up to 2 days in advance and refrigerate.
Freeze baked rolls in an airtight container up to 3 months. Thaw overnight and glaze if desired.
